This Beetroot Salad is absolutely delicious, packed full of nutrition, and is always a hit!
Beetroots are an excellent source of folic acid and a very good source of fibre, manganese and potassium.
This recipe is from the Everyday Cookbook by Thermomix, but can be modified for a food processor.
Beetroot Salad
INGREDIENTS 400g raw beetroot, peeled & quartered 100g carrot, roughly chopped 1/4 red onion 1 green apple, quartered, cored 2-3 sprigs fresh coriander, leaves only 2 Tbl olive oil 20g freshly squeezed lemon juice (~1/2 lemon) Sea salt, to taste
METHOD 1. Place all ingredients into the mixing bowl and chop 2-3 sec/speed 5.
2. Scrape down sides of the bowl and repeat 2-3 sec/speed 5.
3. To serve: Pile beetroot salad onto a bed of spinach leaves and top with crumbled goat's cheese or feta and toasted pepitas or pistachio nuts.
